Two Saturdays ago I made pancakes. I also made a batch of almond butter caramel to drizzle over them, put the extra in the fridge and promptly forgot about it. Until last Friday, that is.
It was late, I hadn’t started cooking dinner yet, and I wanted sugar. Immediately. The fridge was disappointingly devoid of proper snacks, but snuggled in the back of the top shelf was a little container of that leftover caramel. Why not? It tasted pretty good on the pancakes, so surely a little spoonful would make a nice treat to tide me over until dinner. Ha.
What was once a tasty, sweet sauce had metamorphosed into a phenomenally rich and delicious salted-caramel-esque fudge. Maybe I had more than one spoonful. Maybe… 😉
